[ cheers and applause ♪ thank you to the students for being here, the school for having us, and samsung for making this all possible i'm so happy to be in austin i've done it all i came, i saw, i got into a scooter accident
[ cheers ] [ laughter ] you guys, i am so pumped to bring "the tonight show" to u.t. because if you saw my grades in high school, you'd know this is the only way i was getting into u.t. [ laughter ] we have 3,000 students in the house tonight. [ cheers and applause you guys are the best. so many people wanted to come. we had to do a lottery for tickets. but if you wanted to come somewhere that's easy to get into, y'all would be at texas a&m right now. [ cheers and applause oh, oh by the way, i like my jacket i like my jacket, right? i like my jacket i like this frill. [ light laughter ] [ cheers ] i wanted to look like johnny cash. but instead, i look like woody from "toy story" going through a goth phase
[ laughter ] had to put this outfit on after i jumped into the u.t. fountain in my suit please don't tell me what you did to that fountain i don't want to know - [ laughter ] i don't want to know what's in that water but this morning i woke up with a rash on my longhorn. do you know if that makes sense to you [ laughter ] one of the best parts about u.t. has to be the live, longhorn mascot, bevo. [ cheers and applause he's a real live steer let's take a look at him where's bevo -- there he is. aw, yeah [ cheers and applause that's right that's the 15th bevo in u.t. history and if you want to know what happened to the other 14 - franklin barbecue, located at 900 east 11th street, austin, texas, 78702 [ laughter ] i wanted you all to know that there will be no political jokes tonight. i also want you to know that your school colors are white and burnt orange so, you're making it pretty hard i just want to let you know this - [ laughter ] [ cheers and applause

[ cheers and applause i was born in south texas. i was raised in east texas and, yes, now, i hang my hat right here in austin, texas. [ cheers and applause one of the great things about austin is to make it here, all you really got to do is -- is be yourself. you can be a cowboy, you can be a hippie, you can be an american indian, an asian, lesbian. white, black, brown, yellow, blue-haired dwarf and you are welcome -- [ laughter ] in austin. >> jimmy: you are, yeah. >> you really are. >> jimmy: that's big -- that's - [ cheers and applause
>> we got a very lyrical city. but what i think unites all that diversity i was talking about is we have a cowboy code and we have a sense of common values that we all rally behind in austin, nobody's too good, but everybody's good enough. [ cheers and applause we don't lie, cheat, and steal we're an optimistic people we're resilient. we're friendly, we're fair we respect and value ourselves and we respect and value each other. [ cheers ] we do not chase lawsuits no, we do not chase lawsuits [ laughter ] we do break a sweat because we pay the duty to live here and we know that living here and what we have here, it's not free no, no that is how we're living here. and guess what it's a lot cooler because we do [ cheers and applause and y'all know what i'm talking about. to all newcomers and we got 125 a day coming here

[ laughter ] >> yeah. >> jimmy: but you walked out here through a sign that said, "m.o.c." >> yes >> jimmy: "minister of culture. >> yes, sir. >> jimmy: what does that mean to you [ cheers ] wghat does that mean >> so, alright, as minister of culture, i want to champion certain guiding principles that we have. some of them i just spoke of, you know >> jimmy: yeah >> principals that are the soul of austin, that are the soul of the university of texas. we've earned our stripes >> jimmy: yeah >> and now we're growing we want to grow our heritage
we need to maintain to share those same values as we were growing and embracing progress >> jimmy: do you like -- do you like "keep austin weird" is that -- >> "keep austin weird" is great. it's been around for decades it started - [ cheers and applause it started to preserve small businesses in austin and it's great and i don't think it should go anywhere. i do think though that now that austin is coming into a 2.0 stage, that there's something that encapsulates "keep austin weird" plus a a little bit more. and i think we should remind ourselves daily that we need to keep austin, austin, as well [ cheers and applause ♪ this city -- the values that i'm talking about. this city -- >> jimmy: i like that. >> and this university, i get these values because this city and this university has shown me those values for the last 30 years of my life here >> jimmy: and now you're a full on -- you're a professor here. >> yes, sir. >> jimmy: at the school. and you will be teaching "script to screen. >> yes, sir. >> jimmy: what it is like to be in a class with matthew mcconaughey as a
a teacher? >> i think it's fun to be in my class. >> jimmy: yeah [ cheers and applause it's fun to teach it >> jimmy: it is, yeah. it's the class i wish i would've had when i was here at film school. i've noticed about 15 years ago how different the final film was from the original script that i read. so what i've done is created a a class that we chronologically track the original script all the way through the first assembly, all the way through the final picture in a a semester so it's putting the science behind the magic of movie-making for storytellers of tomorrow. >> jimmy: i want to say happy belated birthday to you my friend you turned 50 years old. happy birthday >> yes, sir, thank you [ cheers and applause >> jimmy: you look pretty good you look real good, buddy. >> that's the company i'm keeping. >> jimmy: what i want to talk to you about is how you celebrated >> yeah. >> jimmy: because i think that was -- meant a lot to me i read about it. but, explain to everybody. how did you celebrate your 50th did you have a big party >> i spent time with my family we also -- myself and wild turkey partnering up with operation bbq relief and went out to los angeles and served barbecue and food.
prepared and served it to 20 different firehouses. so as they're fighting fires out there, there's a lot of people in the front line they needed food they needed to put food in the freezer. [ cheers and applause so we went out and said -- have them a "howdy" and helped them out. >> jimmy: i love that you do that i love that you give back. you don't forget where you came from and now you're teaching here and you're doing that. but one of the other big milestones in your life is you joined instagram a couple days ago. >> yes, on my birthday [ cheers and applause >> jimmy: would you be kind enough to take a selfie with me and this great crowd right now >> come on [ cheers and applause ♪ >> jimmy: down there - [ cheers and applause ♪ all right here we go all right here we go all right, we're going to look this way >> all right, all right. >> jimmy: you're facing the wrong way. this is controlled chaos all right, ready wait, we got to be at --
one, two, three. >> hey [ cheers and applause ♪ >> jimmy: earlier today, i got to experience what it's like to be a student in professor mcconaughey's class. i think it went pretty well. take a look at this. [ bell ringing ] >> jimmy: good morning, professor mcconaughey. >> wrong hat there we go. >> jimmy: okay, this is going to be fun. let me just unpack a little bit here >> the class is called "script to screen. >> jimmy: "script to screen. >> yeah. >> jimmy: yeah, i knew that. >> my goal in the class is - >> jimmy: sharpener for the pencils. >> to take you through the evolution of feature film story. from the concept all the way to the finished film. so in this class we're going chronologically follow that journey that a script takes to get to the screen. yes, jimmy can we have class outside? i think everyone here would love it. >> now, today class is right here >> jimmy: okay >> so, look, what i was saying
is we're going to explore why certain script changes are made [ laughter ] we're going to break down two to three scenes in the movie we're going to ask why we made these changes? we're going to talk to the creators and the directors and ask them why they did what they did. [ laughter ] i like to eat the worms like a a fish >> you know what, why don't we skip all of this and jump straight into the final project? just write down five things that you may remember me saying in the last five minutes if you get three out of five, you will pass this class and then you can leave this class and not come back ever again got it got it you don't have -- are you even interested >> jimmy: sorry, no, i am. i was just -- nom i'm just - >> do you know why you're here >> jimmy: you know what, i just want to just - >> i bet you got it. whatever you wrote that to pass the class you got a "c." we got to do yours >> jimmy: wow, is this - >> head on out >> jimmy: really becuae i feel like i probably could have - i can do better. >> no, you did just fine you passed you do not need to come back to class ever again,

just the idea of just finding amazing stories. people who are passionate about what they do, whether it's cooking, design, business. so we're excited this is a lot of fun and a lot of work. >> jimmy: people just love you i mean, it's such a good combination. the chemistry is there you're smart, you're funny you're creative. your book, by the way -- your cookbook i think that might have been the last time i talked to you. was crazy best seller. it was the biggest selling book out of any book. i think it was michelle obama and then your book, was the cookbook >> that's crazy. >> jimmy: so now you have a second one coming out, volume two. >> volume two is coming out. >> jimmy: that is coming out soon >> yup >> jimmy: and then - [ cheers and applause i don't want to tell you how do your network, but i would do a a cooking show if i were you >> i like that idea, jimmy now you gotta talk to this guy >> oh, i'm cool with it. i'm cool with it >> okay. >> you're talking to the executives of the magnolia network. and when jimmy fallon says, joe should do a cooking show, i vote that joe does a cooking show >> jimmy: yes, i think you should do it
